Ingredients
  

For the Lemon Brownies:

  • 1 cup 225g unsalted butter, melted
  • 1 cup 200g granulated sugar
  • 2 large eggs room temperature
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract
  • 1 ¼ cups 160g all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt

For the Lemon Glaze:

  • 1 cup 120g powdered sugar
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest

Instructions
 

  • 1️⃣ Preheat & Prepare the Pan
  • Preheat oven to 350°F (175°C).
  • Line an 8x8-inch baking pan with parchment paper or grease it lightly.
  • 2️⃣ Make the Lemon Brownie Batter
  • In a mixing bowl, whisk together melted butter and sugar until smooth.
  • Add eggs, lemon juice, lemon zest, and vanilla extract, and mix until combined.
  • Sift in flour, baking powder, and salt, stirring until just combined (don’t overmix!).
  • 3️⃣ Bake the Lemon Brownies
  • Pour the batter into the prepared pan and spread evenly.
  • Bake for 20-25 minutes, or until the edges are set and a toothpick inserted in the center comes out clean.
  • 4️⃣ Make the Lemon Glaze
  • In a small bowl, whisk together powdered sugar, lemon juice, and zest until smooth.
  • 5️⃣ Glaze & Serve
  • Let the brownies cool for 10-15 minutes, then pour the glaze over the top.
  • Allow to set before slicing into squares.

Notes

For extra lemon flavor: Add 1 extra tablespoon of lemon zest to the batter.
For a gluten-free option: Use a 1:1 gluten-free flour blend.
Make ahead: These brownies stay fresh for 3-4 days in an airtight container.
