For the Brownie Layer:
- ½ cup 1 stick butter, melted
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ⅓ cup unsweetened cocoa powder
- ½ cup all-purpose flour
- ¼ teaspoon baking powder
- ¼ teaspoon salt
For the Marshmallow Layer:
- 1 packet 2 ½ teaspoons unflavored gelatin
- ¼ cup cold water
- 1 cup granulated sugar
- ⅓ cup light corn syrup
- ¼ cup water
- 1 teaspoon vanilla extract
- Few drops pink food coloring optional
For the Coconut Coating:
- 1 ½ cups shredded coconut
- Few drops pink food coloring
Step 1: Make the Brownie Base
Preheat your oven to 350°F (175°C) and grease a baking pan.
Melt butter in a saucepan or microwave. Stir in sugar, eggs, and vanilla extract.
Sift in cocoa powder, flour, baking powder, and salt. Mix until smooth.
Pour the batter into the prepared pan and bake for 20-25 minutes, or until a toothpick inserted in the center comes out with a few crumbs.
Let the brownies cool completely before adding the marshmallow layer.
Step 2: Prepare the Marshmallow Layer
In a small bowl, sprinkle gelatin over cold water and let it sit for a few minutes.
In a saucepan, combine sugar, corn syrup, and water. Bring to a boil, stirring until sugar dissolves.
Remove from heat and slowly whisk it into the gelatin mixture.
Beat on high speed until it turns fluffy and thick (about 10 minutes). Add vanilla and pink food coloring.
Spread the marshmallow mixture evenly over the cooled brownies.
Step 3: Make the Coconut Coating
Place shredded coconut in a bowl and add a few drops of pink food coloring.
Stir until the coconut is evenly colored.
Sprinkle the coconut generously over the marshmallow layer, pressing lightly to help it stick.
