- Active dry yeast
- Warm milk
- Granulated sugar
- Eggs
- Unsalted butter softened

For the Rainbow Pudding Filling:
- Vanilla pudding mix
- Whole milk
- Food coloring red, orange, yellow, green, blue, purple
For the Sweet Glaze:
- Powdered sugar
- Milk
- Vanilla extract
Make the Dough: Dissolve yeast in warm milk and let it activate. Mix with flour, sugar, eggs, butter, and salt to form a dough. Knead until smooth, then let rise.
Prepare the Filling: Make vanilla pudding, then divide and color it with different food dyes. Layer the colors in a piping bag.
Shape and Fry: Roll out the dough, cut circles, and let them rest. Fry in hot oil until golden. Drain and cool.
Fill and Glaze: Pipe the rainbow pudding inside each doughnut. Whisk glaze ingredients together and dip doughnuts for a shiny finish.
- Best enjoyed fresh but can be stored in an airtight container for up to two days.
- If baking instead of frying, bake at 375°F (190°C) for 10-12 minutes before filling and glazing.
- For a firmer filling, chill the pudding before piping.
