Ingredients
  

  • 1 lb cooked peeled, and deveined shrimp
  • 1 cup Clamato juice or tomato juice
  • 1/2 cup ketchup
  • 1/4 cup fresh lime juice
  • 1 tbsp hot sauce Valentina or Cholula
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup diced red onion
  • 1/2 cup diced cucumber
  • 1/2 cup diced tomatoes
  • 1/2 cup chopped cilantro
  • 1/2 cup diced avocado
  • 1 finely chopped jalapeño optional
  •  
  • Crackers or tortilla chips for serving

Instructions
 

  • In a large bowl, mix Clamato juice, ketchup, lime juice, hot sauce, salt, and pepper.
  • Add shrimp, red onion, cucumber, tomatoes, cilantro, and jalapeño (if using). Stir well.
  • Cover and refrigerate for at least 30 minutes.
  • Gently fold in the diced avocado just before serving.
  • Serve chilled with crackers or tortilla chips. Enjoy!

Notes

  • For the best flavor, let the mixture chill for at least 30 minutes.
  • To prevent avocado from browning, toss it with extra lime juice before adding.
  • Adjust the spice level by adding more or less hot sauce and jalapeño.
