Ingredients
  

  • 1 pound 450g ground beef
  • 4 medium potatoes Russet or Yukon Gold (about 1.5 lbs / 700g, peeled & diced)
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 4 cups 1 liter beef broth
  • 1 cup 240ml heavy cream
  • 2 tablespoons butter or oil for sautéing vegetables
  • 2 tablespoons flour optional, for thickening
  • 1 teaspoon salt or to taste
  • ½ teaspoon black pepper or to taste
  • ½ teaspoon paprika optional, for extra flavor
  • ½ cup shredded cheese optional, for garnish
  • 2 tablespoons fresh parsley chopped (optional, for garnish)

Instructions
 

  • 1️⃣ Cook the Ground Beef
  • In a large pot or Dutch oven, cook the ground beef over medium heat until browned.
  • Drain excess fat and set aside.
  • 2️⃣ Sauté the Vegetables
  • In the same pot, melt butter (or oil) and sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
  • 3️⃣ Add Potatoes & Broth
  • Stir in the diced potatoes and beef broth.
  • Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until potatoes are tender.
  • 4️⃣ Thicken the Soup (Optional)
  • If a thicker soup is desired, mix 2 tablespoons of flour with ¼ cup water and stir it into the soup.
  • 5️⃣ Add Cream & Beef
  • Return the cooked ground beef to the pot.
  • Stir in the heavy cream and let it warm through for 5 minutes (do not boil).
  • 6️⃣ Season & Serve
  • Add salt, pepper, and paprika to taste.
  • Garnish with shredded cheese and fresh parsley before serving.

Notes

For a lighter version: Use milk instead of heavy cream.
For extra richness: Stir in a handful of cheddar cheese before serving.
Make it ahead: This soup stores well in the fridge for 3-4 days or freezes for up to 3 months.
