Servings 12 mini cheesecakes

Ingredients

For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 5 tablespoons melted butter

For the Cheesecake Filling:

  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon cotton candy flavoring
  • 1 cup heavy whipping cream
  • Food coloring pink, blue, purple, or your choice
  • 1/2 cup assorted gummy candies for inside the cheesecakes

For Topping:

  • Additional gummy candies
  • White chocolate melted (optional)

Instructions

  • 1. Building the Base
  • First things first, let’s get that buttery crust ready. Mix graham cracker crumbs with melted butter until it resembles wet sand. Spoon the mixture into a mini muffin tin (or silicone molds for easy removal), then press it down firmly to form the base. Pop it into the fridge for at least 15 minutes to set.

2. Creating Cotton Candy Clouds

  • This is where the magic happens! Beat cream cheese with powdered sugar and cotton candy flavoring until smooth. In a separate bowl, whip heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture to keep it airy and light.

3. Crafting Colorful Swirls

  • Divide the mixture into separate bowls and add a few drops of different food colors (think pastel pink, baby blue, and lavender). Drop spoonfuls of each color into the molds, then use a toothpick to create beautiful swirls. Be gentle—overmixing will muddy the colors.

4. Adding the Candy Surprise

  • Before smoothing out the top, press a gummy candy into the center of each cheesecake bite. It’s a fun little treat waiting to be discovered!

5. Perfecting the Presentation

  • Once your cheesecakes have chilled for at least 3-4 hours (or overnight), it’s time to make them extra special. Top each bite with a few gummy candies and, if you're feeling fancy, drizzle some melted white chocolate over the top.

Notes

  • Use room temperature cream cheese for the smoothest texture.
  • Whip the cream separately to keep your filling light and fluffy.
  • Don’t rush the chilling process—they need time to firm up!
  • Experiment with flavors! Try different gummy candy flavors for variety.
