Ingredients

  • 2 cups gluten-free all-purpose flour with xanthan gum
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 teaspoon olive oil
  • ¾ cup warm water
  • 1 teaspoon apple cider vinegar
  • For the Filling
  • ½ cup pizza sauce
  • 1 cup shredded mozzarella cheese or dairy-free cheese
  • ¼ teaspoon oregano
  • ¼ teaspoon basil
  • ¼ teaspoon garlic powder
  • ¼ cup pepperoni slices optional
  • ¼ cup chopped vegetables bell peppers, mushrooms, or spinach
  • For Baking
  • 1 tablespoon olive oil for brushing

Instructions
 

  • Step 1: Prepare the Dough
  • In a large mixing bowl, combine gluten-free flour, baking powder, salt, and garlic powder. Mix well.
  • Add olive oil, warm water, and apple cider vinegar to the dry ingredients. Stir until the dough starts forming.
  • Knead the dough gently for 2-3 minutes until it is soft and slightly sticky. If too dry, add a little water.
  • Step 2: Roll Out the Dough
  • Sprinkle gluten-free flour on a sheet of parchment paper. Place the dough on it and cover with another sheet of parchment paper.
  • Use a rolling pin to flatten the dough into a ¼-inch thick rectangle.
  • Step 3: Add the Filling
  • Spread pizza sauce evenly over the rolled-out dough, leaving ½ inch of space on the edges.
  • Sprinkle mozzarella cheese, oregano, basil, and garlic powder over the sauce. Add pepperoni or veggies if desired.
  • Step 4: Roll and Cut
  • Carefully roll the dough into a tight log, just like a cinnamon roll.
  • Use a sharp knife or pizza cutter to slice the roll into 1-inch thick pieces.
  • Step 5: Bake or Air-Fry
