Easy and Delicious Strawberry Cake Filling

This homemade strawberry filling is bursting with fresh berry flavor! It’s perfect for cakes, pies, pastries, and more. With just a few simple ingredients, you’ll have a sweet and tangy filling with the perfect thickness.

Ingredients
  

  • 2 cups fresh or frozen strawberries hulled and sliced
  • ½ cup granulated sugar
  • 1 tbsp fresh lemon juice
  • 1 ½ tbsp cornstarch
  • ¼ cup water

Instructions
 

  • Prepare the strawberries – If using fresh strawberries, wash, hull, and slice them. If using frozen, thaw them slightly.
  • Combine ingredients – In a saucepan, mix the strawberries, sugar, and lemon juice over medium heat. Stir occasionally.
  • Dissolve the cornstarch – In a small bowl, whisk cornstarch and water until smooth.
  • Thicken the mixture – Once the strawberries start to soften and release juices, stir in the cornstarch mixture.
  • Simmer – Cook for 2–3 minutes until the filling thickens. Remove from heat and let cool.
  • Use or store – Once cooled, use immediately or refrigerate in an airtight container for up to a week.

Notes

  • For a smoother filling, blend the mixture after cooking.
  • Adjust sweetness by adding more or less sugar.
  • Works well as a topping for pancakes, waffles, and cheesecakes!
