Ingredients

  • 2 cinnamon raisin bagels or plain bagels with a dash of cinnamon
  • 2 large eggs
  • 1/2 cup milk or half-and-half for extra richness
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1 tbsp maple syrup or honey
  • Pinch of salt
  • 1 tbsp butter for cooking
  • Powdered sugar maple syrup, and fresh berries (for serving)

Instructions

  • Slice the bagels in half horizontally.
  • In a shallow bowl, whisk together the eggs, milk, vanilla extract, cinnamon, maple syrup, and a pinch of salt until well combined.
  • Heat a nonstick skillet or griddle over medium heat and add the butter.
  • Dip each bagel half into the custard mixture, ensuring both sides are coated.
  • Place the soaked bagels on the hot skillet and cook for 2-3 minutes per side until golden brown and slightly crisp.
  • Remove from the pan and serve warm with powdered sugar, maple syrup, and fresh berries.

Notes

  • Use day-old bagels for better absorption of the custard mixture.
  • Let the bagels soak for a few extra seconds to ensure they absorb all the flavors.
  • Cook on medium heat to avoid burning while achieving a crispy exterior.
  • Store leftovers in an airtight container in the fridge for up to 3 days and reheat in a toaster oven or skillet.
