Ingredients
  

  • 1 small head of cabbage chopped
  • 2 carrots sliced
  • 2 celery stalks diced
  • 1 onion chopped
  • 3 garlic cloves minced
  • 6 cups of vegetable or chicken broth
  • 1 can 14.5 oz of diced tomatoes
  • 1 teaspoon olive oil
  • Salt & pepper to taste
  • Optional: Thyme parsley, or bay leaf for extra flavor

Instructions
 

  • Prepare Your Vegetables: Wash and chop all the veggies into bite-sized pieces.
  • 2️⃣ Sauté the Aromatics: Heat olive oil in a large pot. Add onions, garlic, and celery. Cook over medium heat until softened.
  • 3️⃣ Add the Vegetables and Broth: Stir in carrots, cabbage, diced tomatoes, and broth. Bring to a boil.
  • 4️⃣ Simmer the Soup: Reduce heat and let it simmer for 20-30 minutes, or until the cabbage is tender.
  • 5️⃣ Season to Taste: Add salt, pepper, and herbs as desired. Stir well and serve hot.
