- 2 cups fresh or frozen strawberries, hulled and sliced
- ½ cup granulated sugar
- 1 tbsp fresh lemon juice
- 1 ½ tbsp cornstarch
- ¼ cup water
Instructions
- Prepare the strawberries – If using fresh strawberries, wash, hull, and slice them. If using frozen, thaw them slightly.
- Combine ingredients – In a saucepan, mix the strawberries, sugar, and lemon juice over medium heat. Stir occasionally.
- Dissolve the cornstarch – In a small bowl, whisk cornstarch and water until smooth.
- Thicken the mixture – Once the strawberries start to soften and release juices, stir in the cornstarch mixture.
- Simmer – Cook for 2–3 minutes until the filling thickens. Remove from heat and let cool.
- Use or store – Once cooled, use immediately or refrigerate in an airtight container for up to a week.
Notes
- For a smoother filling, blend the mixture after cooking.
- Adjust sweetness by adding more or less sugar.
- Works well as a topping for pancakes, waffles, and cheesecakes!
