- 1 lb cooked, peeled, and deveined shrimp
- 1 cup Clamato juice (or tomato juice)
- 1/2 cup ketchup
- 1/4 cup fresh lime juice
- 1 tbsp hot sauce (Valentina or Cholula)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup diced red onion
- 1/2 cup diced cucumber
- 1/2 cup diced tomatoes
- 1/2 cup chopped cilantro
- 1/2 cup diced avocado
- 1 finely chopped jalapeño (optional)
- Crackers or tortilla chips for serving
Instructions
- In a large bowl, mix Clamato juice, ketchup, lime juice, hot sauce, salt, and pepper.
- Add shrimp, red onion, cucumber, tomatoes, cilantro, and jalapeño (if using). Stir well.
- Cover and refrigerate for at least 30 minutes.
- Gently fold in the diced avocado just before serving.
- Serve chilled with crackers or tortilla chips. Enjoy!
Notes
- For the best flavor, let the mixture chill for at least 30 minutes.
- To prevent avocado from browning, toss it with extra lime juice before adding.
- Adjust the spice level by adding more or less hot sauce and jalapeño.
