Ingredients
- 1 small head of cabbage, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 1 onion, chopped
- 3 garlic cloves, minced
- 6 cups of vegetable or chicken broth
- 1 can (14.5 oz) of diced tomatoes
- 1 teaspoon olive oil
- Salt & pepper, to taste
- Optional: Thyme, parsley, or bay leaf for extra flavor
Instructions
Prepare Your Vegetables: Wash and chop all the veggies into bite-sized pieces.
2️⃣ Sauté the Aromatics: Heat olive oil in a large pot. Add onions, garlic, and celery. Cook over medium heat until softened.
3️⃣ Add the Vegetables and Broth: Stir in carrots, cabbage, diced tomatoes, and broth. Bring to a boil.
4️⃣ Simmer the Soup: Reduce heat and let it simmer for 20-30 minutes, or until the cabbage is tender.
5️⃣ Season to Taste: Add salt, pepper, and herbs as desired. Stir well and serve hot.
