  • Total Time: 30 minutes
  • Yield: 12 pizza rolls 1x

Ingredients

Scale

For the Dough

  • 2 cups gluten-free all-purpose flour (with xanthan gum)
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • 1 teaspoon olive oil
  • ¾ cup warm water
  • 1 teaspoon apple cider vinegar

For the Filling

  • ½ cup pizza sauce
  • 1 cup shredded mozzarella cheese (or dairy-free cheese)
  • ¼ teaspoon oregano
  • ¼ teaspoon basil
  • ¼ teaspoon garlic powder
  • ¼ cup pepperoni slices (optional)
  • ¼ cup chopped vegetables (bell peppers, mushrooms, or spinach)

For Baking

  • 1 tablespoon olive oil (for brushing)
  • Parchment paper

Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, combine gluten-free flour, baking powder, salt, and garlic powder. Mix well.
  2. Add olive oil, warm water, and apple cider vinegar to the dry ingredients. Stir until the dough starts forming.
  3. Knead the dough gently for 2-3 minutes until it is soft and slightly sticky. If too dry, add a little water.

Step 2: Roll Out the Dough

  1. Sprinkle gluten-free flour on a sheet of parchment paper. Place the dough on it and cover with another sheet of parchment paper.
  2. Use a rolling pin to flatten the dough into a ¼-inch thick rectangle.

Step 3: Add the Filling

  1. Spread pizza sauce evenly over the rolled-out dough, leaving ½ inch of space on the edges.
  2. Sprinkle mozzarella cheese, oregano, basil, and garlic powder over the sauce. Add pepperoni or veggies if desired.

Step 4: Roll and Cut

  1. Carefully roll the dough into a tight log, just like a cinnamon roll.
  2. Use a sharp knife or pizza cutter to slice the roll into 1-inch thick pieces.

Step 5: Bake or Air-Fry

Oven:
10. Preheat oven to 375°F (190°C).
11. Place pizza rolls on a lined baking sheet and brush with olive oil.
12. Bake for 15-18 minutes until golden brown.

Air Fryer:
13. Preheat air fryer to 375°F (190°C).
14. Place rolls in a single layer and air-fry for 8-10 minutes, flipping halfway.

Step 6: Serve and Enjoy

  1. Let cool for 2 minutes before serving. Enjoy with marinara sauce, garlic butter, or ranch.
