Ingredients
Scale
- 12 organic pitted dates
- ¼ cup peanut butter (or nut butter of choice)
- ¼ cup dry-roasted or raw peanuts (or preferred nuts)
- ½ cup dairy-free dark chocolate (or preferred chocolate)
- 1 teaspoon Maldon salt
Instructions
- Prepare the dates: Slice each date lengthwise without cutting it completely, then open slightly for filling.
- Set up your workspace: Line a tray with parchment paper to prevent sticking.
- Fill the dates: Spoon about ½ teaspoon of peanut butter into each date and add a few peanuts for crunch.
- First freezing step: Place the filled dates in the freezer for 15-20 minutes to firm up.
- Melt the chocolate: Gently melt the chocolate using a double boiler or microwave in 20-second intervals.
- Coat the dates: Dip each date into the melted chocolate or drizzle it on top.
- Add the finishing touch: Sprinkle with Maldon salt immediately for a flavor boost.
- Second freezing step: Return the coated dates to the freezer for 20-30 minutes until the chocolate hardens.
- Enjoy and store: Eat immediately or store in an airtight container in the fridge.
Notes
- Nut-free option: Swap peanut butter for sunflower seed butter and use pumpkin seeds instead of peanuts.
- Chocolate choice: Use milk chocolate or sugar-free chocolate based on preference.
- Storage: Keeps up to 2 weeks in the fridge or 3 months in the freezer.
